ORANGE ZUCCHINI BREAD 
1 1/2 c. flour
1/2 tsp. baking soda
1/4 tsp. ground ginger
1 c. chopped nuts
1/2 c. vegetable oil
2 tbsp. grated orange rind
1 c. grated unpeeled zucchini
2 tsp. baking powder
1/2 tsp. salt
1/8 tsp. ground nutmeg
1 c. sugar
2 eggs
Powdered sugar

Preheat oven to 375 degrees.

Combine flour, baking powder, baking soda, salt, ginger, nutmeg and nuts.

Beat sugar, oil, eggs and orange rind in a large bowl for 1 minute. Stir in zucchini. Add dry ingredients, stir to blend.

Pour into greased bread pan. Bake 45-50 minutes, 375 degrees. Cover with foil last 10 minutes if browning too quickly. Cool on rack 15 minutes. When cooled thoroughly, sprinkle with powdered sugar. Makes 1 loaf.
