PEACH PRESERVES 
3 lbs. tree ripened peaches peeled and stoned
6 c. water
3 peach kernels
2 1/4 lbs. sugar

Bring sugar and water to a boil, add peaches and peach kernels. Cook until peaches are clear and transparent and syrup is the consistency of honey. Remove from fire, let stand overnight or until thoroughly cold in covered vessel. Pack in sterilized jars, and process for 30 minutes at simmering temperature.
