ONION RINGS
2 onions, sliced & separated into rings
1/2 c. flour
1/2 tsp. baking powder
1/4 tsp. salt
1 egg, well beaten
1/2 c. milk
1 tbsp. cooking oil

Blend flour, baking powder and salt; set aside. Beat together egg, milk and oil; stir into flour/salt mixture. Heat frying oil in a deep pan to about 375 degrees (watch to make sure it's not too hot, it should not start smoking).

Dip onion rings, a few at a time, into the batter; drop into hot fat and turn over as they brown. When rings are a light golden brown in color, lift out and drain on paper towels. Salt the rings and serve hot.
