CARROT CAKE 
4 eggs
3 tbsp. brown sugar
3 tbsp. plus 1 tsp. vegetable oil
1 tsp. vanilla
1 1/3 c. dry milk
3/4 c. whole wheat flour
2 tsp. baking soda
2 tsp. cinnamon
3 c. grated carrots
1 (8 oz.) can crushed pineapple
1/4 c. raisins

Spray tube or bundt pan with vegetable oil spray. Using mixer, beat eggs, sugar, oil, and vanilla until light and fluffy. At low speed, beat in milk, flour, soda, and cinnamon until well mixed. Add remaining ingredients and stir to combine. Bake in 350 degree oven 40-45 minutes. Serves 8.
