CHOCOLATE ZUCCHINI CAKE | |
3/4 c. butter 2 c. sugar 2 c. grated zucchini 2 tsp. orange peel; optional 2 tsp. vanilla extract 3 eggs 2 1/2 c. flour 1/2 c. unsweetened cocoa 2 1/2 tsp. baking powder 1/2 c. milk 1 1/2 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1 c. ground walnuts or peanuts 3/4 c. powdered sugar 1 tbsp. orange juice 1/2 tsp. orange peel; optional Cream together butter, sugar, zucchini, orange peel, vanilla extract, and eggs. Add and beat in flour, cocoa, baking powder, milk, soda, salt, and cinnamon. Add nuts. Bake at 350 degrees for 60 minutes. Glaze with powdered sugar, orange juice, and orange peel. NOTE: I do not use the orange in this cake, but prefer to make it plain chocolate and either sprinkle powdered sugar over it when warm or glaze with chocolate icing. This recipe can also be used making the following substitutions. Instead of: 1) milk, use orange juice concentrate, 2) flour, use 1 cup wheat flour and 1 1/2 cups flour, and 3) cocoa, use wheat germ. |
