ZUCCHINI CAKE 
2 c. flour
2 c. sugar
1 tbsp. cinnamon
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 c. Crisco oil
3 eggs
2 tsp. vanilla

Put all ingredients in bowl and blend well. Add 2 cups grated zucchini (unpeeled). Bake at 350 degrees for 45-50 minutes. It's a good moist cake.
