CHOCOLATE ZUCCHINI CAKE 
4 (1 oz.) squares unsweetened chocolate, melted
3 c. flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 tsp. vanilla
4 eggs
3 c. sugar
1 1/2 c. vegetable oil
3 c. grated unpeeled zucchini
1 c. chopped nuts

Beat eggs; add sugar, oil and vanilla and beat until smooth. Stir in chocolate. Add dry ingredients and blend well. Stir in zucchini and nuts. Pour into a greased and floured bundt pan. Bake at 350 degrees for 1 hour or until cake tests done. Cool for 10 minutes on a rack and remove from pan. Makes a bundt cake.
