BANANA CAKE 
2 c. white flour
1 1/2 c. sugar
1 1/4 tsp. baking soda
2/3 c. shortening
1 1/4 c. mashed banana
1/2 c. whole wheat flour
1 1/4 tsp. baking powder
1/2 tsp. salt
2/3 c. buttermilk or sour milk
3 eggs

Mix dry ingredients in a large mixer bowl. Add shortening, 1/3 cup of the buttermilk and the mashed bananas. Beat 2 minutes, then add eggs and the other 1/3 cup buttermilk. Beat 2 more minutes and pour into a greased and floured 9x13 inch pan. Bake at 350 degrees for 45 minutes. Frost with your favorite frosting.
