MY MOM'S CHEESECAKE 
2 1/2 pkg. graham crackers
3/4 c. sugar
1 tsp. cinnamon
1/2 c. melted butter
4 eggs
4 heaping tbsp. flour
1/4 tsp. salt
3/4 tsp. vanilla
1 c. evaporated milk
1 lb. dry cottage cheese
2 tbsp. lemon juice

Roll crackers until crumbly. Combine 3/4 cup sugar, cinnamon, and melted butter. Mix well. Press all but 2/3 cup on bottom and sides of 8 or 9-inch pan.

Beat eggs until thick and light, add remaining sugar, flour, salt and vanilla, lemon juice and beat well.

Combine milk and cheese and mix well. Add to egg mixture. Pour in pan containing crumbs and sprinkle with reserved crumbs. Bake in moderate 325 degree oven 1 1/2 hours or until browned.
