ZUCCHINI CASSEROLE 
2 c. zucchini, cooked
1 can mushroom soup
2 eggs, beaten
1/4 c. mayonnaise
1 sm. onion, chopped
1/2 tsp. pimiento, chopped
1/2 c. cheddar cheese, cubed

Mix all ingredients thoroughly. Grease casserole or spray with Pam and fill with mixture. Dribble over top 2 tablespoons melted butter. Bake at 350 degrees for 30 minutes.
