COTTAGE CHEESE NUT COQUETTES 
COQUETTE MIXTURE:

2 c. low fat cottage cheese
2 c. bread crumbs, seasoned
1/2 c. pecans, coarsely chopped
1/4 tsp. paprika
1/4 c. chopped green pepper
1 1/2 tsp. chopped onion

CORNFLAKE COATING:

1 egg
1/4 c. skim milk
1 c. cornflakes crumbs

Combine first 6 ingredients and mix well. Divide into 10 equal portions and shape into coquettes. If the mixture is dry use small amount of skim milk to moisten.

Lightly beat the egg and milk. Dip each coquette into the mixture, then roll in the cornflake crumbs.

Place coquettes on a greased cookie sheet and bake at 350 degrees for 25 minutes. They also may be deep fried. Serve with a seasoned tomato sauce.
