PARTY POTATOES 
1 1/2 c. grated sharp Cheddar
1/4 c. butter
1 1/2 c. sour cream
1 tsp. salt
1/4 tsp. pepper
8 scallions, sliced
8-10 cooked potatoes, peeled

Boil potatoes until firm, then peel. Grate potatoes. Mix cheese and butter over low heat until almost melted. Add salt and pepper, sour cream, onions and potatoes. Dot with butter. Bake until warm and brown in a casserole dish at 350 degrees.

This will take about 40 minutes if this has been made ahead and refrigerated. This dish can be heated at various temperatures depending upon what else may be in the oven already. Serves 6.
