4 med. baking potatoes 1/4 c. butter 1/8 tsp. pepper Parmesan cheese (opt.) Preheat oven to 425 degrees. Scrub potatoes and pat dry. Do not peel. Cut potatoes in half lengthwise and each half into 4 wedges. Melt butter in long shallow pan in oven. Remove pan from oven and brush potato wedge with butter, covering all surfaces. Sprinkle with pepper and Parmesan cheese. Place potatoes, skin side down in the pan. Bake 40 minutes or until tender and crispy. Brown. If wedges fall on their sides, turn to other side halfway through baking. |
