ZUCCHINI SQUARES 
4 eggs, slightly beaten
1/2 c. vegetable oil
1/2 tsp. salt
Dash of pepper
1 tbsp. parsley
1/2 c. grated cheese (Parmesan or Romano)
1 c. Bisquick
3 c. thinly sliced zucchini (cut into fours, then cut into thin slices)

Mix all ingredients together until well blended (by hand). Spray a 13 x 9 x 2 inch pan with Pam. Pour batter into pan and smooth out with a spoon. Preheat oven to 350 degrees. Bake 25-30 minutes or until brown on top. Cut into squares, may be served hot or cold.
