LOW-FAT SPINACH SQUARES 
2 tbsp. olive or canola oil
1 small onion, chopped
2 cloves garlic, chopped
1 (10 oz.) box frozen chopped spinach, broccoli or zucchini, defrosted
1/2 cup bread crumbs
3 eggs (egg substitutes are fine)
1/2 cup shredded sharp cheddar cheese (low-fat or fat-free is fine)
grated Parmesan cheese

Preheat oven to 350°F. Spray an 8-inch square pan with cooking spray, and set aside.

In a large skillet, sauté the onion and garlic in the oil until golden. Add your defrosted vegetable of choice (spinach, broccoli, or zucchini) and stir until the vegetables combine with the onion and garlic.

Pour mixture from skillet into a large mixing bowl. Add all the rest of the ingredients. Stir until combined. Pour mixture into prepared pan. Sprinkle Parmesan cheese all over the top.

Bake at 350°F for 40 minutes uncovered until the top is crispy. Check half way through, if it's getting to crispy for you, cover with foil.

This recipe is delicious hot or cold. Serve with a salad for your family of 4.
