SQUASH SQUARES 
1/4 c. olive oil
1 c. finely chopped onion
1 tsp. minced garlic
2 1/2 c. shredded zucchini, or summer squash
6 med. eggs, beaten
1 1/2 c. plain bread crumbs
1/4 tsp. ground cayenne pepper

Preheat oven to 325 degrees. In a large skillet, saute onions in olive oil over medium heat until they are tender. Add garlic and squash, saute 3 minutes. In large mixing bowl, combine eggs, bread crumbs, pepper, salt, parsley, grated cheese and cooked squash. Grease a 9 x 13 inch baking pan with olive oil and turn squash mixture into it. Sprinkle top with Parmesan cheese and sesame seeds. Bake for 30 minutes. After cooling cut into 1 inch squares. Serve warm or cold.
