PINEAPPLE UPSIDE DOWN CAKE 
1/3 c. Spry or 4 tbsp. butter
1 tsp. vanilla
1 egg, unbeaten
1 1/2 tsp. baking powder
1/2 c. brown sugar
5 maraschino cherries
1/4 tsp. salt
1/2 c. sugar
1 1/4 c. flour
1/2 c. pineapple juice
5 slices pineapple

Combine Spry, salt and vanilla. Add sugar gradually and cream until light and fluffy. Add egg and beat thoroughly. Sift flour and baking powder together. Add small amounts of flour to creamed mixture alternately with pineapple juice, beat until smooth after each addition.

Sprinkle brown sugar on bottom of 8"x8" pan, greased with Spry. Arrange pineapple slices on sugar, put cherries in centers of slices and pour batter over all. Bake in oven at 350 degrees for 50 to 60 minutes. Serve with whipped cream. Makes 8 to 10 servings.
