CREOLE MEAT LOAF 
1 lb. ground beef
1/2 lb. ground fresh pork
1/2 lb. ground veal
1/2 c. chopped onion
1/2 c. chopped green pepper
1 tbsp. chopped parsley
1 c. uncooked oats
2 eggs
1/3 c. milk
1 (8 oz.) can tomato sauce
1 tbsp. Worcestershire sauce
2 tsp. prepared mustard
1/2 tsp. ground oregano
1/4 tsp. pepper
1/2 c. chili sauce

Mix well all ingredients except chili sauce. Place in a 9 1/2 x 5 x 3 inch loaf pan. Bake at 350 degrees 1 1/2 hours. Drain thoroughly. Invert on shallow pan or serving dish, and spread chili sauce over the top. Return to oven and bake 5 minutes. Makes at least 6 to 8 servings.

This meat loaf is equally delicious hot or cold, but I omit the chili sauce if I'm going to serve it cold.
