ZUCCHINI COOKIES 
1 c sugar
1/2 c softened butter
1 egg, beaten
2 c flour
1 tsp baking soda
1/2 tsp cloves
1 tsp cinnamon
1/2 tsp salt
1 c raisins
1 c chopped nuts
1 c grated zucchini

Cream sugar, butter and egg until fluffy and well blended. Sift dry ingredients together and add to mixture with grated zucchini, blending well. Stir in raisins and nuts. Drop by teaspoonfuls onto greased cookie sheet and bake at 375°F for 12 to 15 minutes or until done. Do not overbake.

Yield: three dozen cookies.
