ZUCCHINI COOKIE BARS 
3/4 c. butter
1/2 c. brown sugar
1/2 c. white sugar
2 eggs
2 c. zucchini, shredded
3/4 c. chopped walnuts, chocolate chips or raisins (optional)
1 tsp. vanilla
2 c. all purpose flour
1 tsp. cinnamon
1/2 tsp. allspice
1 1/2 tsp. baking powder
1 c. coconut

FROSTING:

1 c. powdered sugar
1 1/2 tbsp. butter, melted
2 tbsp. milk
1 tsp. vanilla

Cream butter until fluffy. Beat sugar in. Add eggs and vanilla. Stir in flour, baking powder and spices; add zucchini, coconut and walnuts or chocolate chips or raisins, if desired. Spread evenly into greased 15 x 10 x 1/2 inch or jelly roll pan. Frosting: Mix powdered sugar, milk, vanilla and melted butter until smooth. Frost bars. These also freeze well.
