EGG CUSTARD PIE 
3 eggs
2/3 c. sugar
1/2 tsp. salt
1/2 tsp. nutmeg
2 c. milk or cream

Line pie plate with pastry. To prevent the custard from soaking into the pastry, brush pastry with unbeaten egg whites. Prepare custard as follows: Beat the eggs until light, add the remaining ingredients. Pour into pastry lined pie plate. Bake in hot oven, 450 degrees for 10 minutes then reduce heat to 325 degrees until custard is set, about 30 minutes.
