GRITS AU GRATIN 
3 c. boiling water
.75 c. grits
.5 lb. sharp Cheddar cheese, grated
2 eggs
6 tbsp. butter
1.5 tsp. seasoned salt
Dash of Tabasco sauce

To boiling water add grits and boil 2 or 3 minutes, stirring constantly. Remove from heat. Beat eggs. Add to grits, cheese, eggs, butter and seasonings. Pour into 1.5 quart casserole and bake 1.5 hours at 350 degrees.
