FRESH RHUBARB MUFFINS 
2 c. flour, slightly less if using whole wheat flour
2/3 c. sugar
3/4 tsp. salt
1 c. milk
1 egg
4 tsp. baking powder
1/2 tsp. cinnamon
1/3 c. oil or melted butter
1 1/2 c. finely diced rhubarb

Mix and bake in 400 degree oven for 15-20 minutes.

NOTE: You may also use diced apples and blueberries but for blueberries omit the cinnamon.
