DANISH PASTRY 
2 pkg. dry yeast
1 1/4 c. milk
1/4 c. sugar
Pinch of salt
3 3/4 c. flour
1 tsp. vanilla
2 eggs
Raisins (optional)

Heat milk to a warm only (if too hot will kill yeast). Mix yeast, sugar, salt in warm milk. Mix yeast thoroughly. Add vanilla, beaten eggs, and flour gradually. You should have soft dough. Knead lightly; cover and let rise 10 minutes. Roll dough into a thin layer. Mix 1 cup butter, 1/3 cup flour, brown sugar, cinnamon and raisins together. Spread onto your rolled dough. Fold dough into thirds. Roll each layer as you fold it over. Pinch edges of dough together. Roll it into a thin a layer as possible and cut it into pieces. Place pieces into a greased pan; let rise to double the size. Bake at 350 degrees for 25-30 minutes. Ice if desired.
