DIETER'S DELIGHT 
1 med. onion
1 bunch fresh broccoli
1 bunch cauliflower
1 carrot
1/2 stick of butter and/or vegetable oil
1 sm. bell pepper
1 c. water
2 c. cooked rice

Chop 1 med. onion, and saute in butter and/or vegetable oil. Chop all vegetables, and add to onions. Add 1 cup of water, reduce heat, and steam. Cook 2 cups of rice. Pour vegetables over rice and serve.
