QUICK AND EASY CHICKEN
CACCIATORE
 
1/4 c. olive oil
2 - 4 lb. frying chicken, cut in serving pieces
2 cloves garlic
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. oregano, finely crumbled
1/2 tsp. crumbled basil
1 lb., 4 oz. can tomatoes
3 oz. can mushrooms, or fresh
1/4 c. sherry wine
Parsley

Heat oil in skillet. Brown chicken until golden brown. Add next ingredients. Cover and simmer about 25 minutes or until tender. Add sherry. Cook 10 minutes longer, sprinkle with parsley. Yields 4 - 6 servings. Very easy for the busy lady.
