CHICKEN CACCIATORE | |
2 tsp. butter 1 to 1 1/2 boneless chicken breast 1/2 c. chopped onion 1 med. green pepper 1/2 tsp. oregano 1/2 tsp. basil 2 garlic cloves, minced 1 (28 oz.) can whole tomatoes 1 (8 oz.) can tomato sauce 1/2 tsp. salt 1/8 tsp. cayenne pepper 1 1/2 c. minute rice Heat butter in skillet; add chicken strips, onion, green pepper, and garlic, saute lightly. Add tomatoes, tomato sauce, salt, and seasonings to a pot. Bring to boil then add chicken strips. Reduce heat simmer approximately 1 hour. Stir in rice; cover. Remove from heat, let stand 5-10 minutes. Fluff with fork. Makes about 8 cups approximately 370 calories per serving. |
