MEAT LOAF (WESTERN) 
2 lbs. ground beef
1 onion, chopped
3/4 c. sliced celery
1/4 c. butter
1/3 c. green pepper, chopped
1 tbps. salt
2 eggs
3 c. croutettes, crushed
1/2 c. water
1/2 c. V8 juice or tomato juice
2 tbsp. melted oloe

Brown onion and celery in fat. Combine these with green pepper, salt, eggs and croutettes and water to make stuffing. Add half mixture to beef mix well. Pat out 1/2 of meat mixture in a 2 quart loaf pan (rubbed with fat). Cover meat with remaining stuffing then top with remaining meat. Bake at 350 degrees for 1 1/2 hours. Combine tomato juice and butter. After loaf has cooked 15 minutes. Pour 1/2 liquid over meat. In about 15 minutes pour the rest. This keeps meat moist and adds flavor.
