BEER BATTER FISH | |
2 eggs, separated 2/3 c. beer 2 or 3 drops Tabasco 1 c. flour 1/2 tsp. salt 1/2 tsp. paprika 1/4 tsp. garlic 2 tbsp. butter, melted 1 lb. fish fillets Dry fish on paper towel. Beat egg yolks until light and lemon colored. Gradually stir in beer and Tabasco. Add flour, salt, paprika, butter, and garlic. Stir until blended and smooth. Beat egg whites in separate bowl until whites are stiff but not dry. Fold into batter. Dip fish pieces into batter. Deep fry in heated oil (375 degrees) for 3 to 4 minutes or until golden brown. Drain on paper towel. Yields: Approximately 10 (6 inch) pieces of fish, coated. |
