MINIATURE CHEESECAKES 
3 (8 oz.) pkg. cream cheese
1 c. plus 1 1/2 tbsp. sugar
30 vanilla wafers
3 eggs
1 1/2 tsp. vanilla
1 (16 oz.) sour cream
1 can cherry pie filling

Place foil cupcake wrappers into muffin tin. Place one vanilla wafer into each cupcake wrapper. Mix cream cheese, 1 cup sugar, 1 teaspoon vanilla and eggs together. Divide mixture evenly over vanilla wafers. Bake for 25 minutes. Remove and let cool. Mix sour cream, 1/2 teaspoon vanilla, and 1 1/2 tablespoons sugar. Place 1 tablespoon of mixture over each cheesecake. Then place a small teaspoon of cherry pie filling on top of each cheesecake.
