AUNT KIM'S CHICKEN ENCHILADAS 
About 4 chicken breasts, already cooked
1 can enchilada sauce (mild)
1 - 1 1/2 c. picante sauce (mild)
16 oz. mild Cheddar cheese, grated
1/2 c. chopped onions
1 pkg. 10 flour tortilla shells
Salt, pepper and garlic to taste

Break chicken into pieces. Mix with onions and peppers and 12 oz. of the cheese; set aside.

Heat the sauces; dip shells into sauce until covered. Then stuff shells, roll up and place in ungreased casserole dish (9x13). Then pour remaining sauce and cheese over it. Bake at 350 degrees for 20 minutes covered with foil. Take foil off and cook another 5 minutes. Serves 8.
