SAVORY BAKED CAULIFLOWER 
1 head cauliflower
2 tbsp. butter, melted
2 tbsp. flour
1 c. milk
1/2 tsp. salt
1/4 tsp. pepper
3 tbsp. chopped pimento
3/4 c. chopped green onion
1/4 c. buttered bread crumbs
1/4 c. shredded Cheddar cheese

Wash cauliflower and remove green leaves. Cook covered in small amount of boiling salted water about 15 minutes. Separate into flowerets and place in shallow 2 quart baking dish.

Combine butter and flour in small saucepan, stirring until smooth. Cover over low heat until bubbly. Gradually add milk, stirring constantly until thickened. Add salt, pepper, pimento and onion. Pour sauce over cauliflower and sprinkle with crumbs and cheese. Bake 20 minutes at 375 degrees. Serves 4-6.
