MICROWAVED STUFFED PEPPERS 
Boiling water to cover Meatloaf
1/4 c. tomato sauce

Cook peppers in boiling water for 2 minutes. Drain well. Fill pepper halves with meat mixture; place in glass baking dish. Spread one tablespoon tomato sauce over each serving. Cover with wax paper. Cook at high power for 7 minutes. Rotate dish halfway through cooking. Remove from oven and let stand, covered, 3 minutes.

Menu Suggestion: Serve with cooked corn, whole-wheat rolls, and small bunches of red or black grapes.

Baked Stuffed Peppers: Bake, uncovered, at 375 degrees (moderate) for 45 minutes or until meat is done.

Since microwave ovens vary in power, you may need to adjust your cooking time.
