MICROWAVE - STUFFED PEPPERS | |
3/4 lb. ground chuck or round 1 c. brown rice 1/3 c. wild rice 1 med. onion, chopped 2 (8 oz.) can tomato sauce 1 tbsp. grated horseradish (bottled) 7 med. to lg. green peppers 8-10 oz. shredded Cheddar or Mozzarella (depending upon taste) Ground pepper to taste Cook rices together according to brown rice directions. Top and remove seeds from peppers. Combine ground round, rices, onion, 1 can of tomato sauce, horseradish and black pepper. Fill 1/2 of each pepper with meat and rice mixture, sprinkle in some shredded cheese and continue to fill with the rest of the meat mixture. Place in microwave safe casserole with a cover. Pour 1 can of tomato sauce over the top of the peppers. Microwave on high for 13 minutes, turn dish 180 degrees and microwave for another 13 minutes. |
