BLUEBERRY MUFFINS | |
1/2 c. butter 1 c. sugar 2 c. flour, unsifted 2 eggs 1/2 c. milk 2 tsp. baking powder 1/2 tsp. salt 2 1/2 c. blueberries 1 tsp. vanilla 2 tbsp. sugar for top of muffins On low speed, cream butter and sugar. Add eggs, one at a time until blended. Sift dry ingredients alternately with milk. Mash 1/2 cup of blueberries and stir in by hand. Add rest of berries and vanilla. Grease muffin tins or use paper liners. Pile mix high in pans and sprinkle sugar over top. Bake in 375 degree oven for 30 minutes. Cool in pan at least 30 minutes. |
