STUFFED PEPPERS | |
4 large green peppers 3/4 lb. ground beef 1/2 c. uncooked rice 1 medium onion, chopped 1/2 large green pepper, chopped 1 tsp. salt, or to season 1/4 tsp. pepper, or to season 1- 15 oz. can tomato sauce 1/2 c. water Rinse and cut a thin slice from the stem end of each pepper. Remove white fiber and seeds. Rinse cavities. Drop into boiling water and cover; simmer for 5 minutes. Remove peppers from water and drain. Sauté the meat, onion and chopped pepper. Cook until slightly tender. Add uncooked rice, seasonings, tomato sauce and water. Heat to a simmer, until rice is slightly tender. Fill peppers with the meat mixture. Bake at 350°F for approximately 30 minutes. If desired, top with bread crumbs and bake 10 - 15 minutes longer. |
