CHINESE ROAST CHICKEN 
Serves 4.

1 whole broiler-fryer chicken
1/2 c. soy sauce
1/4 c. lemon juice
2 tbsp. honey
2 tsp. sesame oil
1 tsp. dry mustard
1/2 tsp. ground ginger
1 clove garlic, minced
1/4 tsp. pepper

Mix together soy sauce, lemon juice, honey, sesame oil, mustard, ginger, garlic and pepper to make marinade in small bowl. Place chicken in medium bowl and pour marinade over it. Cover; place in refrigerator and marinate at least 1 hour. Turn occasionally to coat all sides. Place chicken, breast side down, on rack in roasting pan; baste with marinade. Place in 350 degree oven and, basting every 15 minutes, roast until chicken is dark-brown and fork can be inserted with ease, about 1 1/4 to 1 1/2 hours. Serve hot, or refrigerate and serve cold.
