ZUCCHINI, RED PEPPER & OLIVES 
1 red bell pepper, cut into 1/2 inch pieces
1 tbsp. butter
1/2 lb. zucchini, halved lengthwise & cut into 1/4 inch slices
8 lg. black olives, cut into strips
Salt & pepper

In a skillet saute the pepper in butter over moderate heat about 5 minutes. Add the zucchini and olives, cook covered 5 to 7 minutes until zucchini is tender. Stir occasionally. Season with salt and pepper. Serves two.
