OLD FASHION LEMON PIE 
1 c. sugar
4 tbsp. cornstarch
1/8 tsp. salt
1 1/2 c. milk
2 tsp. grated lemon rind
4 tbsp. lemon juice
3 eggs, separated
1 tbsp. butter

In a heavy saucepan or top of double boiler, combine sugar, starch and salt. Gradually add milk, stirring constantly. Continue stirring and cook until mixture is thickened and bubbly. Remove from heat and blend part of the hot mixture into egg yolks. Add to remaining mixture in pan and cook beating constantly for 4 to 5 minutes.

Stir in lemon juice, rind and butter. Mixture should be creamy with a consistency similar to that of a medium sauce. It will thicken on cooling. Pour filling in a 9-inch baked pie hell. Top hot filling with meringue using the 3 egg whites for topping.

MERINGUE TOPPING:

3 egg whites
1/8 tsp. salt
1/4 tsp. vanilla extract or other flavoring
6 tbsp. sugar
