SPLIT PEA SOUP 
1 c. split dry peas
1 pork knuckle, ham bone or 1/2 lb. salt pork, cubed
2 qts. water
1 med. onion, chopped
1/2 c. celery, chopped
1 carrot, diced
Salt and pepper
1 c. cream, optional

Put peas, water, meat, chopped onion, celery and carrots in large kettle. Bring to a boil then continue cooking on low heat for three hours. Strain if desired. Season with salt and pepper. Add cream and stir until well mixed.
