2 c. flour
2 c. sugar
2 tsp. baking powder
2 tsp. baking soda
1 tsp. cinnamon
1 1/4 c. oil
4 eggs
1 tsp. vanilla
1/2 tsp. salt
2 c. (1 lb. can) pumpkin

In medium bowl combine flour, sugar, baking powder, baking soda and cinnamon. In large bowl combine oil, egg, vanilla, salt, and pumpkin. Add dry ingredients to pumpkin mixture; stir thoroughly.

Bake at 350 degrees: cake 1 hour, layers 40-45 minutes, cupcakes 1/2 hour. Frost with confectioners sugar frosting seasoned with cinnamon and nutmeg to taste.
