POTATO CHEESE SOUP 
Each time this soup is reheated, it gets better!

6 to 8 large baking potatoes
2 cups milk
4 cups chicken broth
2/3 cup all-purpose flour
2/3 cup butter
8-12 strips bacon, cooked
1 cup dairy sour cream
1 (8 oz.) pkg. cheddar cheese, shredded
salt and pepper, to taste

Bake potatoes until soft, then peel. Mash or cube the potatoes depending on the desired consistency for the soup.

In a large soup pot, combine butter and flour to make a roux. Cook for 1 minute, then slowly whisk in the liquids.

Add salt and pepper, potatoes, cooked bacon, and cheese. At the last minute, stir in the sour cream. Season to taste with salt and pepper before serving.

Soup will be thick. Add milk to reheat.

I make this wonderful soup all the time during the cold weather months and it's a big hit with my family! I don't use cheddar cheese, but prefer to use diced Velveeta instead. I use about a cup or cup and a half, and it really makes the soup creamier and smoother. I also don't add the bacon until the end, and use it as a topper, along with diced green onions. I do sprinkle a few shreds of cheddar on top w/ the onions and bacon for color. It's sooooo good this way. I recommend everyone do it like this.

I made this soup out of left over mashed potatoes and left over baked potatos and it was a hit. I did not add the bacon but put a few on top of the soup. It was too salty with it in the soup and I used x-tra sour cream. Grandkids ate most of it. Sad part, I tasted it with a spoon but never got any more of it. Also, I am gluten free and used GF flour and no one could tell. Will make again and definitely share the recipe.
