SQUASH CASSEROLE 
2 lb. yellow squash
1 onion, chopped
1/2 c. chopped green pepper
2 tbsp. butter
3 eggs, beaten
1/4 tsp. garlic salt
1 tsp. salt
Pepper to taste
1/2 lb. Velveeta cheese
6 to 8 tsp. butter
Crumbs of 3 slices buttered bread, optional
1/2 can chopped chiles OR
3 chopped jalapeno pepper slices

Cook squash until tender. Drain well. Saute onion and green pepper in 2 tablespoons butter. Combine eggs, onion, green pepper, salt, garlic salt. Mix well. Add to squash. Place in greased casserole dish. Put thin slices of cheese and pats of butter over mixture. Heat in 350 degree oven until cheese is melted. Stir well. Top with bread crumbs and continue cooking until crumbs are brown and crisp (about 20 minutes).
