APPLE MUFFINS 
2 c. flour
1/4 c. sugar
1/2 tsp. salt
4 tsp. baking powder
1/2 tsp. cinnamon
1 egg
1 c. milk
1/4 c. shortening (melted & cooled)
1 c. sliced apples
1/4 c. sugar

Sift together the first five ingredients. Blend well beaten eggs and add milk and shortening. Stir enough to mix ingredients. Carefully fold in cup of sliced apples, sweetened with 1/4 cup of sugar. Pour into well greased muffin pan, filling each cup 2/3 full. Bake 20 to 25 minutes in a moderately hot oven, 400 degrees. Serve piping hot. Yield: 12 medium sized muffins.
