APPLE BRAN MUFFINS 
1 1/2 c. flour
1 tbsp. baking powder
1/3 c. sugar
1/2 tsp. salt
2 c. diced apples or 1 c. applesauce
2 1/2 c. Bran Flakes cereal
1 1/4 c. skim milk
1 egg
1/3 c. oil
1 tsp. cinnamon
1 tsp. vanilla
1/2 c. raisins

Stir flour, baking powder, sugar and salt; set aside. Mix the bran cereal and milk in large bowl; set aside for 1-2 minutes until soft. Add egg and oil to softened cereal beat well. Add flour mixture, stir only until combined. Do not mix. Add apples, cinnamon, vanilla and raisins; gently mix. Do not over mix.

Portion batter evenly into 12 muffin cups. Bake at 400 degrees for 25 minutes until brown. The above muffins are low fat, low sugar and high fiber. They're great for breakfast on the run.
