VERY RITZY CHICKEN | |
3 whole chicken breasts, boned and skinned 2 eggs, lightly beaten 1 c. seasoned bread crumbs 3 tbsp. olive oil 6 oz. sliced mozzarella cheese 1 pt. heavy cream or half and half 1 c. freshly grated Parmesan cheese 2 tbsp. chopped parsley Salt and pepper to taste Dip chicken into beaten eggs, coat with crumbs. Heat oil on medium heat. Add coated chicken and brown lightly on both sides. Remove and put in a baking dish. Top each piece with a slice of mozzarella cheese. Mix together the cream, Parmesan cheese, parsley, salt and pepper. Cook until slightly thickened. Pour over the chicken and bake at 350 degrees for 25 minutes. |
