SWEET POTATO WAFFLES 
1 c. whole wheat flour
1 c. white flour
4 tsp. baking powder
1 tsp. salt
2 tbsp. brown sugar
1 tsp. nutmeg
2 c. milk
1 c. cooked, peeled sweet potato
1/4 c. melted butter
3 eggs, separated

Slice sweet potato in a bowl. Add brown sugar, nutmeg, egg yolks, butter and salt. Add milk. Stir baking powder into white flour. Add to liquid mixture. Stir in whole wheat flour.

Beat egg whites to soft peaks. Add a small amount of egg whites to soften batter before folding in beaten egg whites. Bake. These freeze well and can be reheated in a toaster.
