CHICKEN-SPINACH QUICHE | |
1 unbaked pie shell 1 c. cooked chicken 1 c. shredded Swiss cheese 1 (10 oz.) pkg. frozen chopped spinach, cooked & well drained 1 sm. onion, finely chopped 2 eggs, lightly beaten 3/4 c. mayonnaise 2 tbsp. grated Parmesan cheese 3/4 c. milk 1/2 tsp. dried basil Grinding of black pepper Bake pie shell, 375 degrees, after piercing sides and bottom of crust with fork, for 10 minutes, remove and reduce temperature to 350 degrees. In large bowl, toss together chicken, cheese, spinach and onion. Spoon into baked shell. Beat eggs, mayo, milk, Parmesan cheese, basil and pepper. Pour over chicken mix. Bake at 350 degrees for 40 minutes or until golden and set. Let stand 10 minutes before cutting. May be warmed up. Serves 6 to 8. |
