SPINACH QUICHE 
1 (10 inch) pastry shell
2 tbsp. butter, melted
3/4 c. white onion, chopped
1/4 fresh parsley, chopped
1 (10 oz.) pkg. frozen chopped spinach, cooked well, drained
2 tbsp. flour
1 tsp. salt
1/4 tsp. black pepper
1/4 tsp. nutmeg
1/8 tsp. cayenne pepper
1 tbsp. Worcestershire sauce
2 eggs, beaten
1 c. grated Swiss, Jarlsburg or Gruyere cheese
1/3 c. grated Parmesan cheese
1 1/4 c. milk

Preheat oven to 400 degrees. Prick pastry shell with a fork and bake at 400 degrees for 8 minutes. Reduce oven temperature to 350 degrees. Melt butter in a 12 inch skillet and saute onions and parsley. Add well-drained spinach and cook for 2 minutes. Add flour, salt, pepper, nutmeg, cayenne, and Worcestershire sauce and mix well. In a medium- size bowl, combine eggs, cheese and milk. Mix well and add to spinach mixture. Pour into the pastry shell and bake for 45 minutes to 1 hour, until quiche is firm in the center.
