MOCK SAUSAGE 
1 lb. dried blackeyed peas
1 sm. onion
1/4 tsp. cayenne
1/2 tsp. sage
1/2 tsp. salt
1/4 c. flour
2 tbsp. bacon drippings OR oil

Cook peas until tender, drain and mash. Add seasonings and saute onions with mixture. Form patties. Fry until golden brown.
